Prepare 1 cup of quinoa according to the package instructions
- ½ small zucchini cut into mini cubes
- 1 avocado
- 2 small tubers of beetroot (peeled and cooked) diced
- A handful of black olives, seeded, sliced
- Fresh coriander leaves
- Juice of ½ lemon
- Sea-salt
- Olive oil
- Cumin
Mix everything and enjoy, ideal to eat leftovers on the next day or to take it with you on the road / to the office.
